Exactly Cybelle.. This tripp aka anton is a PITA. He deliberately makes Venus a target for the haters UGH 
Your center should be higher than the edges.
You might look to the heat of your oven, and also whether you are beating the egg whites too much. Or whether you souffle is truly done when you take it out of the oven.
But you know that was a very good question and one that is hard to answer.
You might also check your recipe. I find that using an unequal amount of egg whites to egg yokes works the best.
