When you create a text layer, right click on it in the layers pallette, go to blending options and choose "Stroke" Then pick the color you want and the size of the stroke  I hope it's clear enough
I will make the other 2 tutorials a bit later.

4 pic avatar tutorial
I never wrote a tutorial before so I hope I will be clear enough
1 - open the canvas in the size you want and use the line tool to draw a diagonal line from a top corner to the bottom corner. Set the line to 1px.
2 - repeat step one on the other corner of the canvas
3 - insert a pic and resize it using the free transform tool so it fits in one of the 4 boxes.
4 - use the polygonal lasso tool to select the other 3 triangles of the canvas (or select the one your pic is in and then go to "select>inverse")
5 - press delete to erase all the parts of the pic you don't need anymore
repeat steps 3-5 with the other 3 pics and colour it as you like
