There are a lot of reasons but it seems to be no point in explaining, so... . But to give you some examples: intensity, drama, great rallies (and this could go on).

That's true for a lot of matches that are close. I think this recent Fed Cup match with Vinci-Panova had a lot of good points and drama, also some poorly played points & some mistakes at key moments, which is what some people mean by "shitfest"

No player can play at the highest level (during) an entire match, especially if it is a top player vs a top player.

Of course. But they are plenty of people who saw the Cincy final who think Serena is capable of playing at a higher level.
I tend to think "shitfest" if a player is in good position to win and plays way below her normal level at crucial moments. And the other player is also
Part of it is that in a close match, you're often emotionally involved, so watching a player below their level at key moments makes you wince

Rodionova vs. Mattek-Sands in Charleston

Epic and shitfest in one.

No, that match was a shitfest. It would be one thing if they both were playing descent or good tennis, but neither player did. Serena's play in that final reminded me of how how she played both Jankovic and Li Na in Istanbul. When Serena is tired or uninterested in a match she gets crabby and it shows up in her play. And what made the match SO BAD was the fact that Azarenka failed to take advantage of Serena's sub par playing. Aweful aweful match.
