This is from the Tennis Australia website:

"The US Tennis Association ground at Flushing Meadows, in Queens, does not have a roof over the stadium, as the Australian Open does, or covers beside the courts, as is the practice at Wimbledon and the French Open. Instead, the courts are dried by teams of 15 people working with mops and towels."

It works pretty well for them, actually. It goes quickly. As for why the other two don't do it that way--well, have you ever tried to dry off clay or grass with a towel?
