Where i work, the computers are all attached to a central server, and all the employees have log ons to access the system. My question is this: Can the administrator know my password and use it to log on to other sites where I use the same password? This is really important, because I think one of my administrators on our network has done this.

not officially, most system software doesn't provide a means of seeing passwords, just changing them, but often there are ways..
it's a good idea to use different passwords, and change them periodically.
even just adding "_1", "_2", etc. to the same 'base' is better than using the same one over and over again.. including non-alpha characters (like dash or underline), numerics and capitals also makes it much less likely to be guessed.
