Serena winning the Australian Open in 2003.

She did NOT play her best. She had to struggggggggle through her R128!
Then, she comes back from a 1-5, 2 match point deficit against Kim.
Then, she slams Vee in three tough sets to win her....

2005 Wimbledon. Shocking, high quality (best quality major since...probably 2002 Australian, IMO)
