they finish always around 8 PM GMT

I've seen matches finish after 9:30pm British Summer Time. I've also seen play discontinued well before 9:00pm. It depends on how bright it is. On a clear day they can play for longer than on an overcast day. But basically there are no rules. Play continues until visability gets too bad to go on.

As for when matches are allowed to start there are again no straight foward rules on this. There are many factors to be considered, such as whether it the match is 2 out of 3 sets or 3 out of 5 sets, how bright it is outside, the possibility of rain, whether or not matches are behind schedule, and other even more complicated issues involving trying to be fair to the players, the fans, and well.....you never really know what is going to happen. In other words, quite similar to Roland Garros scheduling wise.
